1. Preheat the Oven
Preheat your oven to 550°F (288°C). This high temperature is essential for creating the crust that seals in flavor.
2. Season the Prime Rib
In a small bowl, mix salt, pepper, and garlic powder.
Rub the seasoning generously over the entire roast, covering all sides evenly.
3. Prepare for Roasting
Place the prime rib fat side up in a shallow roasting pan.
No rack is needed—the fat will naturally baste the meat as it cooks.
4. Roast at High Heat
Roast uncovered at 550°F using the following timing:
-
5 minutes per pound for rare
-
6 minutes per pound for medium
-
7 minutes per pound for well done
Example:
A 6-pound roast cooked medium = 36 minutes at 550°F.
5. Turn Off the Oven — Do Not Open the Door
Once the roasting time is complete, turn the oven off completely.
Do not open the oven door for 2 full hours.
This step is critical. Opening the door releases heat and disrupts the slow, even cooking process.
6. Remove and Slice
After two hours, remove the roast from the oven.
Slice and serve immediately—no additional resting time required.
The meat will be perfectly cooked, juicy, and tender from edge to edge.
