Traditional Alsatian Baeckeoffe

A classic, hearty, and convivial family dish

Baeckeoffe is one of Alsace’s most iconic comfort foods. This slow-cooked casserole combines marinated meats, potatoes, onions, and white wine, sealed and baked gently until meltingly tender. Rich, rustic, and deeply aromatic, it’s a dish made to be shared—and even better the next day.

Ingredients (Serves a Family)

2 kg (4.4 lb) potatoes

650 g (1.4 lb) beef chuck (or blade roast)

650 g (1.4 lb) pork shoulder or pork neck

650 g (1.4 lb) lamb shoulder

1 kg (2.2 lb) onions

1 bottle Alsatian white wine (Riesling or Sylvaner)

1 carrot

1 shallot

1 leek (white part only)

2 sprigs thyme

1 bay leaf

5 juniper berries

A few celery leaves

1 garlic clove

Salt and black pepper (whole peppercorns recommended)

200 g (1½ cups) flour (for sealing the dish)
